Father's Favorite Fish Fillets!

Tender fish fillets, dressed in their Sunday best. Cooked to perfection under a mantel of bacon, tomatoes and cheese. I have been using Cod Loins, and my husband at first thought he was eating lobster. This recipe is fast and easy and worthy of company. It is also easy to make just for 2 or any amount needed.   1. Combine sauce ingredients in a microwave safe bowl and nuke until melted. Stir to combine and set aside. Heat oven to 350°F Lightly salt and pepper fish and sprinkle with old bay on both sides. Spray bottom of oven proof casserole, large enough to hold fillets. Place fish into casserole and cover with bacon strips and pour over HALF of butter sauce. Bake for 20 minutes. Less time for thinner fillets.
  2. NOTE: I buy Wild caught frozen Cod Loins at Sam's Club. They are each about the size of a hot dog bun.
  3. Remove from oven after 20 minutes and place tomato slices over the top. Sprinkle with cheese ( I have also used shredded Parmesan)and pour over remaining butter sauce. Turn oven to broil and place back in oven at least 6 inches from heat source. Broil until top bubbles and cheese is melted.
