Fat Free Cauliflower Salad (Sub. for Potato Salad)

Ingredients
- 1 whole cauliflower, steamed and florets chopped into chunks
- 2 slices bacon, cooked crisp and crumbled
- 4 -5 scallions, chopped
- 1⁄2 cup finely diced celery
- 1⁄3 cup fat-free Miracle Whip
- 1⁄3 cup fat free sour cream
- 4 tablespoons Dijon mustard
- 1⁄2 teaspoon kosher salt
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon paprika
Directions
- mix all ingredients in a large bowl and chill for at least three hours before serving! Enjoy! prep and cooking time do not include chilling time.
