Farmer's Casserole

Ingredients
- 1 tablespoon olive oil
- 4 cups potatoes, cut into 1/2-inch cubes
- 3⁄4 cup monterey jack cheese, shredded
- 1 cup ham (diced and cooked) or 1 cup Canadian bacon (diced and cooked)
- 1⁄4 cup green onion, sliced
- 1 jalapeno pepper (seeded, finely chopped)
- 4 eggs (beaten) or 1 cup egg substitute (beaten)
- 1⁄2 cup milk
- 1⁄4 teaspoon pepper
Directions
- Greast a 2-quart square baking dish with the olive oil.
- Arrange the potatoes evenly in the dish.
- Bake at 350 for 10 minutes.
- Stir the potatoes.
- Sprinkle with the cheese, ham, green onions, and jalapeno.
- Mix the eggs, milk, and pepper in a bowl.
- Pour over the potatoes.
- Bake, uncovered at 350 for 40 to 45 minutes or until potatoes are tender.
- Serve with fresh fruit.
