Farfalle With Lima Beans and Sun Dried Tomatoes

Ingredients
- 6 tablespoons olive oil
- 1⁄2 cup coarsely chopped onion
- 1⁄4 cup sun-dried tomato, thinly sliced (packed in olive oil)
- 1 clove garlic, minced
- 8 ounces farfalle pasta
- 1 (10 ounce) package frozen lima beans
- freshly ground black pepper
Directions
- Heat oil in a medium skillet; add the onion and sauté until golden; stir in the tomatoes and garlic. Set aside.
- Meanwhile cook the farfalle in plenty of boiling salted water, 3 minutes.
- Add the lima beans and cook until both the pasta and lima beans are tender. Drain.
- Toss the onions and pasta together and toss until blended.
