Fantastic Fresh Tomato Salad

This quick and easy recipe is a great summer dish and has fantastic fresh flavors. Goes well alongside about anything off the grill. It is best made with high quality olive oil. I normally do not measure the amounts for this dish. You should adjust the salt and oil given the size of your tomatoes, and to your own taste. Show more

  1. Wash and dice tomatoes. Put diced tomatoes into a glass bowl. Add the salt and olive oil and mix. Serve immediately. That's it. Sometimes the simplest things are the best.
  2. Note: The flavor of your olive oil will dictate the flavor of this dish. I highly recommend using an oil that's worthy of consuming by itself. Gianfranco Becchina's Olio Verde is what I prefer to use.
