Fancy Prepared Chiles or Peppers

This is a traditional way to prepare any kind of chiles or peppers for immediate use in cooking or for freezing for later use. As with many old-timey ways of doing things, it can be labor intensive. If you are not making poppers the seeding goes faster when you can cut open the pepper. Totally worth it - the flavor can't be beat! Show more

Directions

  1. Wash peppers and dry on paper towels.
  2. Cut off tops.
  3. Pack tightly into shallow pan.
  4. Broil 5-10 minutes - until skins start to blister and brown.
  5. Turn 1/3; broil 5-10 more minutes.
  6. Turn 1/3; broil 5-10 more minutes.
  7. Let cool slightly.
  8. Place peppers in large plastic bag(s).
  9. Let sit to steam at least 1/2 hour.
  10. Put on surgical gloves if peppers are spicy hot.
  11. Peel the peppers.
  12. Carefully remove the innards. As small skinny knife is useful.
  13. Optional - fill with your favorite cheesy filling.
  14. Freeze untouching in layers overnight.
  15. Place in freezer bag for later use.
  16. I use the toaster oven - its tray fits 24 jalapenos.
