Falafel

Ingredients
- 2 cups dried garbanzo beans
- 1 small yellow onion
- 1 bunch of fresh mint
- 1⁄2 bunch fresh cilantro
- 3 garlic cloves
- 1 egg
- 1 slice bread
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 teaspoons cumin
- 1 lemon, juice of
Directions
- Soak chickpeas overnght and drain 2 hours before cooking. This will allow them to air-dry a little bit.
- Pulse all ingredients in a food processor until completely smooth. Work in batches if necessary.
- Form into patties and fry in olive oil over medium heat for 3 mintues each side (or until golden brown).
- Serve with pita bread, tzatziki, shredded lettuce and tomato.
