Extra Tasty Mushroom Stroganoff

This recipe makes a warming main course served with rice. Mushrooms and red peppers are cooked with wine, tomato paste, onion and garlic and flavored with paprika. Show more

  1. Soak the dried mushrooms in 1/2 cup warm water for 20 mins the drain and reserve the soaking liquid.
  2. Heat the oil in a flameproof casserole dish, add the onion and garlic and cook for 3-5 mins until softened.
  3. Add the mushrooms, peppers and paprika and season with salt and pepper. Cook, stirring for 5 minutes.
  4. Mix the cornstarch with the stock and add to the dish with the wine, mushroom water and tomato paste. Bring to a boil.
  5. Simmer gently for 10-15 mins then taste for seasoning. Serve hot with rice.
