Excellent Lemon Pie

Yields: 1 pie
Ingredients
- 1 (3 ounce) box jello lemon pudding mix (4 serving size)
- 2⁄3 cup sugar
- 2 1⁄4 cups water
- 3 egg yolks
- 2 tablespoons lemon juice
- 2 tablespoons butter
- 3 egg whites
- 6 tablespoons sugar
- 1 pie shell
Directions
- Mix pudding, 2/3 cup sugar, 1/4 cup water together, then blend in egg yolks and remaining water.
- Cook over medium heat, stirring until mixture reaches full bubbling boil.
- Remove from heat, blend in lemon juice and butter.
- Cool 5 minutes, then pour into your choice of pie shell.
- Prepare meringue -- beat egg whites until foamy, gradually beat in sugar.
- Top pie with meringue.
- Bake at 425 degrees for 5 - 10 minutes.
- Cool 4 hours before cutting.
