Everyone's Favourite Mini Cheesecakes

This was in the winter 2011 issue of 'All You Need Is Cheese'. I have made a similar recipe with vanilla wafers, but this one is much nicer in my book. Easily halfed to make 24 cakes. Show more

  1. Preheat oven to 350*. Line a mini muffin tray with paper liners, which makes removal easier.
  2. In a bowl, mix ingredients for the crust. Divide evenly among the lined muffin cups, and press down lightly. Set aside.
  3. In a large bowl, mix cream cheese, sugar and flour until smooth.
  4. Add sour cream and vanilla. Mix well.
  5. Add eggs, one at a time. Mix well.
  6. Carefully fill cups, and bake for 20 minutes, or until filling is firm.
  7. Allow to cool to room temperature, then chill for at least 1 hour before serving.
  8. Remove paper liners, and top with optional jams or pie filling.
  9. These are also quite delicious plain. :).
