Essence of Vanilla

This essence is a richly flavored version of vanilla extract. To substitute the essence for extract, pour it from the bottle through a tea strainer and measure out half of the usual quantity of flavoring The Cook Book By Oscar Of The Waldorf.

Ingredients

• 3  vanilla beans, cut into very small shreds
• 2  cups brandy

Directions

1. Put the vanilla shreds into a bottle with the brandy, and cork the bottle.
2. Shake the bottle occasionally, and in the course of three months’ time the essence will be ready for use.
