Endive Salad With Pea Shoots

Serves: 2
Yields: 4 cups
Ingredients
- 1 head Belgian endive, chopped coarsely about 1 inch wide
- 1 head fennel, julienned
- 1 celery heart, chopped, including the leaves (for me, that was about 5-6 celery sticks)
- 1 green apple, julienned (I used an apple slicer first core it then just diced it)
- 1 cup pea shoots (I found a package in Whole Foods, I couldn't find these easily!)
- 1⁄3 cup parmesan cheese (shredded but feel free to use the Kraft in the bottle kind!)
DRESSING
- 2 tablespoons lemon juice
- 4 tablespoons extra virgin olive oil
- salt and pepper, to taste
Directions
- Toss all ingredients together in a large bowl, the cheese and dressing go last.
