Endive Lettuce With Walnut-Gorgonzola Dressing

Ingredients
- 6 heads endive, cut into julienne strips
- 1⁄2 cup walnut oil
- 1⁄4 cup white wine vinegar
- 1 lemon, juiced
- 1 tablespoon Dijon mustard
- 1 cup gorgonzola, crumbled
- 1 cup granny smith apple, cubed
- 1⁄2 cup walnuts, chopped
- 1⁄2 cup flat-leaf Italian parsley, chopped
Directions
- Wash the lettuce thoroughly and pat dry. Place the lettuce in a salad bowl and keep chilled until you are ready to serve.
- Whisk together the oil, vinegar, lemon juice, and mustard. Pour over the lettuce and mix gently. Place on chilled plates and sprinkle with the cheese, apples, walnuts and parsley. Toast some great bread and enjoy!
