Em's Chicken Pesto Pizza

Learn to love spinach. A spinach and cheese pizza without a ton of sauce.

  1. Boil water and place chicken breast into boiling water until completely cooked. Cook until chicken reaches 180°F Cool and dice.
  2. Cook fresh spinach in a pan drizzled with oil. Spinach should look like it has shrunk.
  3. Spread 1/4 cup vegetable oil over pizza crust with a pastry brush.
  4. Spread 1/2 cup basil pesto sauce evenly over crust.
  5. Add the cooked spinach over sauces.
  6. Add sliced mushrooms.
  7. Add chicken.
  8. Spread the feta cheese over the pizza crust.
  9. Sprinkle shredded mozzarella cheese over the top of the pizza.
  10. Cook at 350°F until cheese is melted.
