Emilie's Streusel Jam Muffins

Ingredients
- 1⁄3 cup sugar
- 1⁄4 cup butter, softened
- 1 egg
- 2 1⁄3 cups all-purpose flour
- 4 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 cup jam
Streusel
- 1⁄2 cup sugar
- 1⁄3 cup all-purpose flour
- 1⁄2 teaspoon cinnamon
- 1⁄4 cup butter, softened
Directions
- Cream sugar and butter together. Add egg and mix well. Set aside for now.
- In a separate bowl, combine flour, baking powder, and salt. Mix with creamed mixture while also adding the milk. Mix in vanilla.
- Use a spoon to drop in small spoonfuls of MOST of the jam into the batter. Set aside a small amount of jam, approximately 1/8 cup, for later use. Keep spooning the jam into the mixture while stirring and folding the batter gently.
- Grease the muffin pan. Fill 12 muffin tins 2/3 full of the muffin batter.
- Make Streusel: Mix all of the ingredients for the streusel together in a bowl. Make sure streusel is thoroughly mixed.
- Sprinkle the top of muffins with streusel mixture. Add one small dollop of jam right in the middle of each muffin top. Then sprinkle more streusel on top.
- Bake at 375°F for 25 to 30 minutes.
