Elsie's Zucchini Bread

Yields: 2 loaves
Ingredients
- 3 eggs, well beaten
- 2 cups sugar
- 3 teaspoons cinnamon
- 2 teaspoons vanilla
- 1 cup oil
- 2 cups zucchini, raw shredded, with peel
- 2 cups flour
- 1⁄4 teaspoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
Directions
- Mix eggs, sugar, cinnamon and vanilla well. Add oil and zucchini. Stir in remaining ingredients just until moistened.
- Pour into greased bread pans. Bake at 350 for 45 minutes.
