Elizabeth's Chocolate Zucchini Cake

Ingredients
- 6 ounces good quality semisweet chocolate
- 1⁄2 cup vegetable oil
- 1⁄2 cup butter
- 1 1⁄2 cups sugar
- 3 eggs
- 1 tablespoon vanilla
- 1⁄3 cup buttermilk
- 2 cups unbleached flour
- 1⁄3 cup Dutch-processed cocoa powder
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups grated zucchini
Directions
- Melt chocolate, oil and butter at low heat.
- Mix together in seperate bowl sugar, eggs,vanilla and dairy choice.
- In another bowl sift together flour, cocoa, soda, baking powder and salt.
- Mix all ingredients alternating wet and dry.
- Finally add zucchini.
- Bake in greased and floured Bundt pan at 350 degrees F.
- For 40-60 minutes or until straw comes out clean.
