Elies Zucchini Bread

Ingredients
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 teaspoons vanilla
- 2 cups shredded zucchini
- 8 1⁄2 ounces crushed pineapple, drained
- 3 cups flour
- 2 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 1 teaspoon salt
- 1 1⁄2 teaspoons cinnamon
- 3⁄4 teaspoon nutmeg
- 1 cup nuts
- 1 cup raisins
Directions
- Beat eggs until thick & foamy, add oil, sugar & vanilla & mix. add zucchini & pineapple mix well. Separately mix flour baking soda, baking powder, salt, cinnamon, & nutmeg, Add to wet mixture. Stir in nuts & raisins. Pour into 2 greased & floured pans and bake at 350 degree oven for 1 hour or until golden brown.
