Electric Skillet Cheesecake

I got this recipe in High School Home Ec. Class. So, I have had this for a long time. the texture isn't the same as a normal cheesecake. the preparation time is a guess. Cooling time is not included. Show more

  1. For the crust:
  2. Mix crumbs, butter, sugar and cinnamon with a fork in a 9 inch skillet.
  3. Press evenly over the bottom and up the sides of the skillet.
  4. For the filling:
  5. Beat cream cheese in medium bowl and until light and fluffy.
  6. Add eggs, sugar, vanilla and lemon rind.
  7. Beat until well mixed.
  8. Pour into crumb crust in skilet.
  9. Cover skillet and cook on semi-temp at 300* for 20 minutes.
  10. For Sour cream topping:
  11. Mix sour cream, vanilla and sugar.
  12. Pour over cheesecake filling and spread evenly.
  13. Cover skillet and cook for 5 minutes.
  14. turn skillet off and remove cover and cool.
  15. Strawberry Topping:
  16. spread the 2 cups of strawberries around the outer edge of cheesecake.
