Elderflower Syrup

Another way to make use of this versatile plant. You'll get about 5l of syrup. It makes a very nice homemade give away and refreshing drink. The preparation may take some time, but it is absolutely worth it! It's best to use a very large pot or even a thoroughly cleaned bucket. Show more

  1. Cut oranges and lemon in slices (wash thoroughly before using).
  2. Dissolve citric acid powder in the 3 litres of water.
  3. Add cleaned elderflower heads, orange and lemon slices to water.
  4. Let rest for 3 days.
  5. Add 4kg of sugar and stir from time to time.
  6. Let rest for another day.
  7. Strain contents through a kitchen towel/mousselin and transfer to sterile glass bottles (you can save up some empty wine bottles, rinse them with boiling water and put them in the hot oven for about 1 hour at 150°C).
