Elderberry Jam - Microwave

the blackbery is very good. have not tried the other berries.

Yields: 4 cups

Ingredients

  • 4  cups berries (elderberry or raspberries, blackberries, gooseberries or logan berries)
  • 3  cups sugar
  • 1  apple, peeled,cored and grated
  • 1  tablespoon lemon juice

Directions

  1. Wash the berries and put into a large bowl.
  2. Add the grated apple and lemon juice, and cover with pierced plastic wrap.
  3. Cook for 7 or 8 minutes on high, then leave to stand for 10 minutes, covered Stir in the sugar and cook uncovered for 15-20 minutes on high, Test by stirring with a wooden spoon, If it leaves a channel, the setting point has been reached.
  4. If not, cook for a further 2 or 3 minutes on high.
  5. Pour into hot sterilized jars.
  6. seal and cover.
