Ingredients
- 2 teaspoons olive oil
- 1⁄2 cup onion
- 1 (14 ounce) can kidney beans
- 2 1⁄2 cups stock or 2 1⁄2 cups water
- 1 cup rice
- 1 cup corn
- 1 cup salsa
- 1⁄4 cup green lentil
- 1⁄4 cup green pepper
- 1⁄2 teaspoon chili pepper
- tomatoes, slices (optional)
Directions
- Saute onions in the oil.
- Add in the rest of the ingredients.
- Simmer 30 minutes.
- Serve over tomato slices.
