Eggplant Roll-Ups (Ww 5 Points)

Ingredients
- 1 eggplant, peeled, sliced 1/4 inch thick lengthwise
- 4 tablespoons shallots, chopped
- 4 garlic cloves
- 1 1⁄2 cups tomato and basil pasta sauce
- 1 tablespoon extra virgin olive oil
- 6 pieces Laughing Cow light swiss cheese, 6 wedges
- 10 leaves fresh basil, shredded
- 1⁄2 cup parmesan cheese, grated
Directions
- Peel and Slice Eggplant.
- Broil eggplant on on baking sheet until golden on both sides (15 mins).
- Saute shallots & garlic until soft.
- Add Tomato & Basil Sauce.
- Transfer to baking dish.
- Place 1 wedge of cheese and a basil leaf on one end of eggplant slice. Roll up.
- Lay seam side down in sauce.
- Top with Parmesan.
- Bake 10 to 15 minutes.
