Eggplant (Aubergine) Casserole

  1. Cut the eggplant into large shoestrings.
  2. Dip in mixture of egg and milk; then in flour.
  3. Fry eggplant until golden brown.
  4. Saute onion, bell pepper, and ground beef.
  5. Add tomato sauce and water.
  6. Season to taste.
  7. In a casserole dish, make a layer of eggplant, beef sauce, and then mozzarella cheese.
  8. Sprinkle with oregano and bake at 350 for 30 minutes.
