Eggplant (Aubergine) Cakes

Directions
- Peel and dice eggplant.
- Boil until tender.
- Drain and mash with other ingredients.
- Shape into small cakes and fry in deep fat.
- Do ahead and put into aluminum pan to keep warm.
- I have to tell you: when i posted this to Zaar, I hadn't tried it. I just fixed it. It's very bland. The only taste that was there was the ketchup! lol I'm not sure what it needs, but either much more salt; an herb; something -- .
