Eggnog Mini Loaves

Yields: 3 loaves
Ingredients
- 2 1⁄4 cups flour
- 2 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 2 eggs
- 1 cup eggnog
- 3⁄4 cup sugar
- 1⁄2 cup butter (melted)
- 2 teaspoons vanilla extract
- 2 teaspoons rum extract
Directions
- In a large bowl combine: flour, baking powder, salt, cinnamon & nutmeg.
- In another bowl beat the eggs, eggnog, sugar, butter & extracts; stir into dry ingredients until moistened.
- Pour into 3 greased 5 3/4 in x 3in x 2in loaf pans. Bake at 350 for 30-35 minutes. Cool for 10 minutes before removing from pans.
- Enjoy, very yummy holiday bread.
