Egg White Fluffed Corn

While working at Blue Cross Blue Shield 1964, the RN processer I did coding and correspondence for gave me this recipe. Jo Pat Huggins is from Edenton, NC and is married to the internationally renowned Victor Huggins. She is a superb cook!!

Ingredients

• 3  cups corn, cooked
• 1 1⁄2 cups milk
• 2  tablespoons butter (melted)
• 4  tablespoons flour (sifted)
• 1⁄4 cup sugar
• 1  teaspoon salt
• 1⁄2 teaspoon ground pepper
• 2  eggs, separated

Directions

1. Mix all ingredients, except egg whites. Beat egg whites until stiff and fold into mixture. Pour into greased casserote and bake 300-325 degrees approximately 45 minutes.
