Egg Casserole

Ingredients
- 5 eggs, whisked
- 2 slices bread, cubed (may use low carb bread)
- 1⁄3 cup Bisquick
- 10 3⁄4 ounces cream of onion soup, undiluted
- 1⁄2 teaspoon Emeril's Original Essence
- 1⁄4 teaspoon Worcestershire sauce
- 2⁄3 cup cheese, shredded (Monterey Jack, Colby, Cheddar or combinination)
- 1⁄3 cup cheese, shredded (for topping)
- 1⁄4 cup bacon bits (optional)
Directions
- Mix all ingredients except for the 1/3 cup of shredded cheese in a medium bowl. Grease or spray with non-stick spray a 9 x 11 baking dish. Pour mixture into baking dish and sprinkle on remaining 1/3 cup of shredded cheese and bacon bits if desired. Bake uncovered for 30 minutes at 350 degrees.
