Egg and Watercress Rounds

Ingredients
- 4 hard-boiled eggs, peeled and chopped
- 1⁄4 cup finely chopped watercress leaf
- 4 green onions, minced
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- salt and pepper
- 6 slices white bread
- 2 tablespoons butter, softened
- 1 sprig watercress
Directions
- In a small bowl, combine egg, watercress, onions, mayo and sour cream. Season with salt and pepper.
- Place bread on a cutting board and cut into 2 inch rounds.
- Spread butter lightly over bread and then spoon egg mixture over the top.
- Garnish each with a watercress sprig.
