  1. Saute the mushrooms in olive oil over medium-high heat for 7-8 minutes.
  2. Add salt and pepper.
  3. Place edamame and corn in large bowl.
  4. Add the cooked mushrooms, cranberries and peppers.
  5. whisk together all the dressing ingredients.
  6. Pour dressing into bowl and gently toss together.
  7. Adjust seasoning to taste.
