Easy Winter Soup

This hearty soup is easy to prepare and tastes great.

  1. Cook barley in covered pot till soft.
  2. Drain and put barley aside.
  3. Dice, peel and cook potatoes in chicken broth till soft.
  4. Mash till almost smooth.
  5. Add shredded carrot and finely chopped spinach.
  6. Cook till vegetables soften. 5 minutes.
  7. Add cooked barley and stir to mix.
  8. Add butter and cream right before serving.
