Easy Tuna Pasta

Ingredients
- 12 ounces whole wheat penne
- 4 (5 ounce) cans tuna in water (3 cans drained, 1 with the water)
- 1 cup Baby Spinach, chopped
- 1 red bell pepper, diced
- 1⁄2 onion
- 1 teaspoon turmeric
- 1 teaspoon salt, to taste
- 1⁄2 teaspoon crushed red pepper flakes, to taste
- 2 -3 tablespoons canola oil
Directions
- Saute the crushed red pepper, onion, and bell pepper in oil for a few minutes then add the chopped spinach. Once wilted, add the cans of tuna, turmeric, salt, and pepper. Add the cooked pasta and serve warm. **For a cold tuna salad, add light mayo and mustard and serve on a bed of greens.
