Easy Tortilla Soup

Ingredients
- 2 (14 ounce) cans chicken broth
- 1 (14 ounce) can diced tomatoes
- 1 (14 ounce) can spicy chili beans
- 1 (4 ounce) can chopped green chilies, drained
- 3⁄4 cup chopped onion
- 1 garlic clove, minced
- 2 teaspoons red wine vinegar
- 1⁄8-1⁄4 teaspoon crushed red pepper flakes
- 1⁄4 cup chopped cilantro
- salt
- 6 corn tortillas, cut into 1/2 inch strips (6 inch)
- cooking spray
- 1⁄2 small avocado, peeled and diced
Directions
- Combine all ingredients except cilantro, salt, tortillas, cooking spray and avocado in slow cooker.
- Cook on high 3-4 hours.
- Stir in cilantro and season to taste with salt.
- Place tortilla strips on baking sheet. Spray with cooking spray and toss. Bake at 375 for about 5 minutes, or until crisp.
- Garnish soup with tortilla strips and avocado.
