Easy Tamarind Eggplant (Aubergine)

Ingredients
- 1 eggplant, cubed
- 1 onion, chopped
- 3 roma tomatoes, chopped
- 1 tablespoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon tamarind paste
- 1 teaspoon cooking oil, of your choice
Directions
- Heat oil on medium/high heat.
- Add onions, cook until soft.
- Add tomatoes, ginger, garlic. Cook for 5 mins until soft.
- Add eggplant and tamarind. Stir.
- Cover and cook on low heat for 20 minutes, stirring occasionally.
