Easy Steamy Fruit Pudding

An amazingly healthy and economical pudding. This is a great way to use up stale bread, and what's more, it has NO added fat, eggs or sugar! Cooking time is mostly passive. Show more

Ingredients

  • 34 cup skim milk
  • 2  teaspoons bicarbonate of soda
  • 2  cups  white breadcrumbs
  • 2  cups  mixed dried fruit
  • 2  bananas, mashed
  • 1  cup  prepared low-fat custard, to serve

Directions

  1. Combine milk with bicarb and set aside.
  2. Grease a 6 cup capacity basin.
  3. Place all ingredients except custard into a large bowl and mix well.
  4. Pour into prepared basin and cover securely with foil.
  5. Place basin into a large saucepan, and pour in enough water to come halfway up the sides of the basin.
  6. Bring to the boil, reduce heat, then simmer, covered, for 2 hours.
  7. Serve warm, cut in wedges, and drizzled with custard.
