Easy Spanish Rice

So easy, so yummy, so authentic tasting! From my sister-in-law who is a fabulous Mexican cook. This rice is easy to multiply and hard to mess up. With so few ingredients and such great taste, it's a favorite. Show more

Serves: 6-8

Ingredients

  • 1  cup white rice
  • 2  cups water
  • 1  tablespoon olive oil
  • 14 teaspoon cracked pepper (or preground pepper if you don't have whole pepper)
  • 1  tomato-flavored bouillon cube (found in Mexican isle at grocery store, Knorr brand is best)
  • 14 cup salsa (or pic de gallo or 1/4 tomato & 1/8 onion if you don't have salsa)

Directions

  1. In a medium size sauce pan, place olive oil, pepper and tomato bullion.
  2. Simmer until bullion dissolves.
  3. Add rice.
  4. Add water.
  5. Add salsa (or tomatoes and onion).
  6. Sprinkle a tiny bit more pepper.
  7. Stir together.
  8. Cover and simmer for 20 minutes as you would regular rice.
  9. Fluff and serve.
