Ingredients
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 1 (14 1/2ounce) can diced tomatoes with green chilies
- 1 (14 1/2ounce) can chicken broth
- 1 (10 3/4ounce) can cream of chicken soup
- 1 (16 ounce) package frozen mixed vegetables
- 2 cups cooked chicken, cubed
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
Directions
- Heat oil in a 3-quart saucepan over medium-high heat.
- Add onion; cook for 3 minutes.
- Add tomatoes, broth, soup, vegetables, chicken and seasonings; simmer over medium heat until heated through.
