Easy, Soothing, Tasty Chicken Soup

Ingredients
- 3 cups leftover cooked chicken, cut into bite-size pieces
- 1 onion, chopped finely
- 2 -3 stalks celery, diced finely
- 2 carrots, chopped
- 1 cup frozen peas
- 1 (4 ounce) can diced green chilies
- 1 1⁄2 teaspoons minced bottled garlic or 3 cloves garlic, minced
- 1 teaspoon cilantro
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon herbes de provence or 1⁄4 teaspoon rosemary
- 1⁄4 teaspoon poultry seasoning
- 6 chicken bouillon cubes, non-dissolved
- 6 cups water
- 2 -3 dashes hot sauce (optional)
Directions
- Mix all ingrediants in large saucepan, adding water and chicken boullion cubes last.
- Stir well.
- Bring to a boil, then simmer for 40 minutes, or until veggies are tender.
- Serve while hot.
