Easy, Simple Chipotle Chicken and Rice

I like easy, quick, nutritious foods, especially if you can cook them in one pan!

  1. Drain juice from tomatoes into 2-cup measure. Add water to make 2 cups of juice/water. Set aside, along with tomatoes.
  2. Spray 10-12 inch skillet with cooking spray. Heat over HIGH heat about 1 minute. Add chicken and onions. Reduce heat to MED-HIGH and cook about 5 minutes til lightly browned, turning chicken to brown both sides and stirring onions.
  3. Add rice, juice/water mixture and tomatoes to skillet. Bring to a boil, stir, cover and reduce heat to LOW. Cook 14 minutes. Stir and serve.
