  1. Combine liquid eggs, cheese, salt and pepper in 4-cup glass measuring cup or bowl. Cover with plastic wrap leaving a small space open for venting. Microwave on 70% power (medium-high) for 1 minute. Remove and stir. For slightly runnier eggs, microwave for 1 minute longer, or for firmer eggs, microwave for 1 minute 10 seconds longer.
  2. Remove eggs and let stand for 30 seconds.
  3. Spread toasted bagel with butter and top with eggs. Add tomatoes and lettuce if desired.
