Easy Roasted Red Pepper Dip

Ingredients
- 2 red bell peppers, roasted and quartered
- 1⁄4 cup mayonnaise
- 2 tablespoons Italian parsley
- 1 anchovy fillet
- 1 garlic clove, coarsely chopped
- 2 tablespoons olive oil
- 2 teaspoons white wine vinegar
- 2 tablespoons Greek yogurt
- salt and pepper
Directions
- In a food processor, process everything together except yogurt and salt and pepper.
- Stir in yogurt. Season to taste with salt and pepper.
