Easy Pototo Taquitos #5FIX

Ingredients
- 18 corn tortillas
- 1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
- 1 cup canola oil
- 1 tablespoon granulated garlic
- 1⁄4 cup chopped parsley
Directions
- Put 1 C canola oil in a large cast iron skillet.
- Heat to medium.
- Warm tortillas in the microwave, four at a time, between paper towels about 20 seconds. Hot tortillas are less likely to tear or rip.
- Meanwhile put potatoes, garlic and chopped parsley in a bowl.
- Mix well.
- Place 1 T potato mixture near edge of warm tortilla. Roll up tightly.
- Place seam side down in hot oil.
- Cook until golden brown on all sides.
- Drain on paper towels.
- Keep warm in tented foil on on low heat in oven until all taquitos are fryed.
- Serve warm with desired toppings and sauces.
