Yields: 4 1/2 cup servings

Ingredients

  • 6  tablespoons sugar
  • 1 12 tablespoons flour
  • 1  teaspoon cinnamon
  • 12 teaspoon allspice
  • 14 teaspoon salt
  • 6  pears, cut into 1-inch chunds
  • 13 cup raisins
  • 1  tablespoon lemon juice
  • 6  amaretto cookies, coarsely crushed
  • 6  low-fat ginger snaps, coarsely crushed
  • 1 12 tablespoons light butter, melted (the stick kind)

Directions

  1. Preheat the oven to 450 degrees. Lightly spray a 9 x 13-inch baking dish with nonstick spray.
  2. To make the filling, combine the sugar, flour, cinnamon, allspice and salt in a large bowl. Add the pears, raisins and lemon juice; toss to mix well.
  3. Spoon into the baking dish. Sprinkle with the cookies and drizzle with the melted butter.
  4. Bake until the pears are tender and the filling is bubbling, 35-40 minutes.
  5. Cool slightly and serve warm or let stand at room temperature up to 4 hours.
