Easy Parmesan Chicken

This is a recipe I got from Mr. Food a LONG time ago...it is still our favorite! It's changed a little over the years, but the basics make for a great dish. Easy to double or prepare ahead of time. The measurements can be changed to suit your tastes or diet needs - more lemon juice or less oil/butter. It seems like it tastes really good every time we make it!   1. In a small bowl, mix the oil and lemon juice.
  2. In a separate bowl, mix the cheese, biscuit mix, and pepper.
  3. Dip the chicken in the oil mixture, then coat with the cheese mixture.
  4. In a large skillet, heat the butter over medium heat until hot.
  5. Fry the chicken until golden and done, about 5-8 minutes per side.
