Easy Mexican Rice

Serves: 4-6
Ingredients
- 1 cup uncooked rice (not instant)
- 1 onion, diced
- 1 -2 garlic clove, minced
- 1 3⁄4 cups chicken broth
- 1⁄2 cup salsa
- 2 tablespoons oil
Directions
- Saute onons and garlic in saucepan in hot oil until softened.
- Add rice and saute 2 -3 minutes, or until it begins to turn white.
- Add broth and salsa.
- Bring to a full boil; cover and reduce to simmer.
- Simmer 25 minutes & turn off heat.
- Let rice sit for 5 minutes. Fluff with fork and serve.
- Optional: Stir in a small can of well drained corn, mixed vegetables or sliced green onion.
