Easy Mexican Chicken

Quick and easy casserole with a mexican twist. Serve with mexican rice or corn and black beans. This came from Chicken Casseroles. I have not tried this, just posting for safe keeping. Show more

Serves: 4-5

Ingredients

  • 4 -6  bonelss skinless chicken chicken breasts or 4 -6  prepared rotisserie chicken
  • 16  ounces salsa
  • 1  ounce  taco seasoning (1 pkg)
  • 8  ounces  shredded  taco blend cheese or 8  ounces  mexican 3 cheese
  •  sour cream

Directions

  1. Roll chicken in taco seasoning and place in casserole or baking dish. Cover chicken with salsa.
  2. If chicken is not cooked, bake for about 30 minutes at 350 or more until done. If is already cooked, add shredded cheese and bake at 350 until melted.
  3. Put on plate and top with sour cream.
