Easy Mediterranean Three-Bean Salad

Here is a different take on a three bean salad. I came up with this recipe, using beans and veggies that I like. Feel free to use my recipe as a base recipe. The longer it sits the better it gets. Prep time does not include chill time. Show more

Serves: 6-8

Ingredients

  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15 ounce) can great northern beans, drained and rinsed (or any other white bean)
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, your choice drained and rinsed (I used white)
  • 3  plum tomatoes, chopped (also known as roma tomatoes)
  • 1  green pepper, chopped (or any color you choose, red, yellow, orange)
  • 12 teaspoon  celery salt (optional to taste)
  • 1  cup  Italian dressing

Directions

  1. In a large bowl, combine pinto beans, great northern beans, black beans, corn, tomatoes, and celery salt (if using). Pour dressing over all and mix well.
  2. Cover with a lid and chill in fridge at least one hour. (the longer it chills. the better it is. Overnight is best.).
  3. serve and enjoy!
