Easy Mediterranean Orzo Salad

Ingredients
- 1 lb orzo pasta (cooked al dente)
- 1 bunch flat leaf parsley, finely chopped
- 1 shallot, finely diced
- 1 lemon, zest of
- 2 -3 lemons, juice of
- olive oil
- salt
- pepper
- 1 (4 ounce) package reduced-fat feta cheese, crumbled
Directions
- Cook Orzo until al dente. Drain and place in large bowl. Stir the cooked pasta to cool. Let sit until pasta is room temperature.
- Finely dice the shallot and finely chop the parsley.
- Zest one of the lemons.
- In a separate bowl, combine lemon zest, shallot, parsley, juice of 2-3 lemons, pinch each of salt and pepper.
- With a whisk, slowly drizzle olive oil until combination is emulsified. Taste along the way to make sure no one ingredient overpowers any of the others.
- Pour mixture over room temperature pasta and mix to fully coat pasta.
- Stir in crumbled feta.
