Easy Italian Potato Casserole

Ingredients
- 4 -6 potatoes
- 1⁄4 cup oil
- 1 onion, chopped fine
- 2 tomatoes
- 1 cup breadcrumbs
- 1 teaspoon dried oregano
- salt and pepper
Directions
- Peel potatoes and slice.
- Cook onion in 2 tablespoons of oil for 5 minutes.
- Add potatoes and saute for 3 minutes.
- Season with salt and pepper.
- Transfer to baking pan which has been sprayed with non-stick cooking spray.
- Top with diced tomatoes.
- Sprinkle with oregano and breadcrumbs.
- Drizzle with oil.
- Bake at 400 degrees F.
- until tender.
- About 30 minutes.
