Easy Greek Stuffed Tomatoes

Ingredients

  • 6  firm tomatoes, insides scopped out and reserved
  • 2  tablespoons olive oil
  • 1  small  white onion, diced
  • 2  cups spinach, chopped
  • 2  teaspoons dried basil
  • 12 cup  breadcrumbs
  • 1  cup  chopped  olive
  • 1  cup  chopped artichoke heart
  • 1  large egg, beaten
  • 12 lb feta cheese, crumbled
  •  salt and pepper

Directions

  1. Preheat oven to 350 degrees.
  2. In a saucepan heat oil and saute the onion and spinach.
  3. In a medium bowl combine the sauted onion and spinach with the remaining ingredients, including the scooped out stuff.
  4. Stuff the filling back into the tomato halves.
  5. Bake for 20-25 minutes.
