Easy Greek Stuffed Tomatoes

Ingredients
- 6 firm tomatoes, insides scopped out and reserved
- 2 tablespoons olive oil
- 1 small white onion, diced
- 2 cups spinach, chopped
- 2 teaspoons dried basil
- 1⁄2 cup breadcrumbs
- 1 cup chopped olive
- 1 cup chopped artichoke heart
- 1 large egg, beaten
- 1⁄2 lb feta cheese, crumbled
- salt and pepper
Directions
- Preheat oven to 350 degrees.
- In a saucepan heat oil and saute the onion and spinach.
- In a medium bowl combine the sauted onion and spinach with the remaining ingredients, including the scooped out stuff.
- Stuff the filling back into the tomato halves.
- Bake for 20-25 minutes.
